Fortune telling on pancakes on Shrovetide

Probably not a single Russian holiday is complete without fortune-telling. Fortune telling on boots, mirrors, flowers, candles, coffee. On Maslenitsa, fortune-telling on pancakes is very common.

There are several ways to set pancakes for Shrovetide week.

Method number 1. Suitable for married girls. Even at the stage of the establishment of the test, they look at its quality. If the dough fits well, then the girl will have a good year and her family will not be sick. And if the dough does not fit well, then the year for the girl and her family will not be the most successful.

Method number 2... Divination by the first pancake. Fortunetellers try to bake the first pancake as best as possible, because it can be used to judge the future of the girl. If the pancake turned out to be beautiful, with smooth edges, ruddy and well-baked, the girl will marry, if she has not yet married. For a married girl, a good first pancake means well-being and prosperity in the family throughout the year.

Method number 3... This fortune-telling was popular again among unmarried girls. If the first pancake turned out good, they would take it out into the street and give it to a random male passer-by, asking for his name. The girls believed that their future husband would be called the same as the name of this man.

Method number 4. This fortune-telling is suitable for everyone, but it is hardly possible to call it serious. The bottom line is that the girls made a question or desire, took a pancake from a pile and looked at its pattern, trying to find an answer for themselves or some kind of secret sign. Of course, they tried to discern only the good.

Method number 5. The most delicious way is fortune-telling on fillings in pancakes. Only unmarried girls wondered. The bottom line is that by the filling it was possible to judge the character of the future husband. First, all the girls together baked pancakes and prepared different fillings, and then wrapped the fillings in pancakes so that it was impossible to guess what was inside.

After that, they took turns taking any pancake they liked. So, a girl who got a pancake with cottage cheese was promised a caring husband. The one who ate a pancake with meat - an intelligent, wealthy and gentle groom. With sour cream - hesitant and timid, with honey - romantic and beautiful, with jam - cunning and cheerful.

Cinnamon pancakes

Ingredients

Sugar 2-3 tbsp
milk 1 l
flour 2 tbsp.
eggs 2 pcs.
cinnamon 1-2 tsp
salt
vegetable oil

Preparation

Prepare everything you need. The milk needs to be warmed up a little.
Then pour the milk into the mixer bowl, pour the flour, salt, add eggs, granulated sugar, cinnamon. We combine all products together and beat thoroughly with a mixer.
We heat the pan well, grease with oil. Next, pour the pancake dough on it with a thin layer.
As soon as the pancake is browned on one side, turn it over with a spatula to the other side.
You can pour vegetable oil directly into the dough, then the pan will no longer need to be greased.

Put the prepared pancakes on a flat plate and grease with butter and sprinkle with sugar on top.

Cheese pancakes

These pancakes are thin, soft, with a pleasant cheesy taste and rich aroma.

For 0.5 liters of milk we need:

2 chicken eggs
0.5 tsp salt
8 tablespoons flour
sugar to taste (I have 1.5 tablespoons),
4 tablespoons of vegetable oil (I have sunflower oil),
100 gr. Of hard grated cheese,
dry yeast a little more than a tablespoon.

While kneading the dough, it is advisable to warm up the milk a little, to a warm (not hot!) State, in a microwave oven. Then add salt, sugar, yeast. Stir everything until it is evenly dissolved. Then pour out half of the prepared flour, stir again and let it rest for 30 minutes in a warm place so that the yeast starts working.

After the time has elapsed, a little foam will appear. Now it's the turn of the eggs. Separate the whites from the yolks. Put the yolks first and beat with a whisk, then grated cheese, sunflower oil. Do not forget to stir everything in stages with a whisk. Now pour in the second part of the flour. Beat with a whisk until there are no lumps left. Beat the whites and add the resulting foam to the dough, stirring gently.

Grease a hot frying pan with butter and bake on both sides, like ordinary pancakes.

Pancake recipe on water

Products:

Three chicken eggs,
two liters of filtered water at room temperature,
a teaspoon of salt
three tablespoons of granulated sugar,
two tablespoons of refined sunflower oil and
780 g flour.

Preparation:

The first step is to mix all the liquid ingredients: oil, eggs and water. Salt, sugar are added to them and flour is added in small portions. When adding flour, the dough must be thoroughly stirred with a whisk and the main thing that you must remember: you cannot add the entire volume of flour at once!
The dough prepared according to this recipe turns out to be thin and slightly lumpy, but this should not scare you. Let the dough stand for about twenty minutes, then beat it again with a whisk or mixer (blender), all the lumps will gradually disperse and you will have a smooth dough, the correct consistency, which is ideal for baking thin pancakes.
Next, we heat the pan, send a small part of vegetable oil (no more than one teaspoon) into it, distribute it over the entire bottom and, as soon as the oil warms up, pour out half of the ladle of dough. Fry the pancake over medium heat, turn over and fry until tender, then send it to a wide platter. Thus, we use up all the available dough, stirring it from time to time with a whisk.
Ready-made thin pancakes can be wrapped with meat or sweet curd filling. Or you can simply roll them up into triangles and serve with jam or red caviar.

In consistency, it should turn out like thick sour cream, but so that it can be poured into a frying pan. We put the soda, when we decide on its amount and decide that it is enough, pour in a few tablespoons of vegetable oil. Stir and leave the dough for an hour in a warm place. We bake over medium heat, but after pouring the dough, the pan is covered with a lid. After one or two minutes, open the lid, turn the pancake over and cover it again. Grease the frying pan with oil from time to time.

Hostesses rarely use cornmeal for cooking due to the fact that homemade cornmeal dishes quickly turn stale and should only be served fresh. Pancakes according to the proposed recipe are largely relieved of such shortcomings, and corn flour gives them a special taste.

Required Ingredients:

Wheat flour - half a glass;
Corn flour - a third of a glass;
Salt - a third of a teaspoon;
Sugar - sand - 2 teaspoons;
Natural yogurt - 300 grams;
Chicken egg - 2 pieces;
Butter - 30 grams;
Sparkling mineral water.

The procedure for making pancakes:

Beat eggs with salt and sugar, then add natural yogurt and continue beating. Transfer this mixture to wheat flour and stir. Then add baking powder and cornmeal. Knead the pancake dough well so that there are no lumps. After that, add butter (melt) to the dough and dilute the pancake dough with mineral sparkling water.

The dough should be slightly thicker than for regular pancakes. The dough should sit for a while, about 15 or 20 minutes.
After that, we begin to bake pancakes in a well-heated frying pan. Grease the pancakes with butter and stack them on top of each other.

These pancakes are good with sour cream or jam. And if you have caviar, you can make wonderful pancake rolls with caviar.
Bon Appetit.

Monday opens Shrovetide. In the morning, the father-in-law and mother-in-law sent the daughter-in-law to her father and mother for the day, and in the evening they themselves went to visit the matchmakers. We agreed on the time and place of the festivities. Finished building snow cities, swings, booths.

Pancakes started baking on Monday. The first pancake was given to poor neighbors so that they remembered the dead.

  • chicken eggs - 3 pcs.
  • sugar - 2 tbsp. l.
  • salt - 1 tsp
  • water - 2 tbsp.
  • wheat flour - 2 tbsp.
  • vegetable oil - 2 tbsp. l.
  • soda - 0.5 tbsp. l.
  • table vinegar - 1 tsp.

In the cup that you took to knead the pancake dough, break the declared amount of chicken eggs.

We take a whisk or, better, a mixer and start beating the eggs. You should get such an egg mass with bubbles.

Pour granulated sugar into the resulting egg mass.

Then add the salted spice.

Again, we need a whisk or mixer to beat the ingredients we have entered.

We begin to sift wheat flour of the highest grade into the sweet egg mass.

Mix the flour with the egg mass immediately.

At the same stage, add soda for the pancake dough, which should be extinguished with vinegar.

Now we add water. We use chilled but boiled water.

Mix all ingredients thoroughly until smooth.

Add 3 tablespoons of vegetable oil to the finished pancake dough in water and eggs. Mix again. For baking pancakes, the dough is ready.

Grease the pan with vegetable oil. Put the dough on a hot frying pan using a ladle.

Bake pancakes on each side for about a minute.

Delicious pancakes on water and eggs are ready for the first day of Shrovetide!

Recipe 2: Pancakes for Shrovetide - Day 2, Flirting

On this day, brides were shown. Parents had to have time to marry the young before the beginning of Great Lent, because the Church does not allow marriage in Lent. If everything went well, then immediately after Easter, on Krasnaya Gorka, a wedding was played.

On Tuesday, guys and girls met, rode down the hills together, came to each other for pancakes.

  • Water - 500 ml;
  • Buckwheat flour - glass;
  • Chicken egg - 2 pcs.;
  • Sugar, salt to taste.

Beat the eggs in a separate container until they become dense, slightly white. We leave separately for at least 2-3 minutes. So the egg mass is saturated with oxygen and, combining with the dough, will make it even more airy.

Add sugar, salt to warm (about 30-40 degrees) water and add buckwheat flour, methodically stirring with a whisk or fork. It is important that the water is really warm. Grits from ground buckwheat have larger particles than "standard" wheat.

By the way, adherents of proper and healthy nutrition may not buy ready-made buckwheat flour in supermarkets, but make it on their own. You just need to "crush" aromatic buckwheat in a coffee grinder. Simply and easily!

Pour the previously beaten eggs into the resulting mass. Mix everything thoroughly until completely homogeneous.

We warm up the pan with a small amount of oil. Pour one pancake portion with a ladle.

When the edges are browned, turn the pancake over to the other side. We also fry. Buckwheat pancakes will become even more aromatic and tender if, when stacking them on top of each other, each layer is slightly moistened with butter. It is convenient to apply directly with a fork.

You can serve buckwheat pancakes to the table with anything: butter, condensed milk, jam, jam, fresh berries, jelly, milk, etc. They will also become an ideal "container" in the form of an envelope for meat or mushrooms, if you do not make the dough very sweet ...

Recipe 3: Gourmands - the third day of Maslenitsa (with photo)

On Wednesday, the son-in-law came to his mother-in-law for pancakes and brought other guests with him. The mother-in-law watched intently as the son-in-law behaved at the table. People used to say that if a man chooses pancakes with salty filling, then he is stubborn and with a difficult character. And if sweet, then with his wife it will be soft and affectionate. But this sign, of course, is also not connected with the Orthodox tradition and is considered a superstition.

In general, on this day, it was customary to eat pancakes as much as the heart desires.

  • Eggs 2 pcs.
  • Milk 250 ml
  • Flour 120 gr
  • Sugar 2 tablespoons
  • Butter for greasing a frying pan

Break 2 eggs into a bowl.

Add 120 g flour and 2 tbsp. Sahara.

Stir.

Add milk gradually.

When adding milk, beat with a whisk or mixer so that there are no lumps.

The dough is not very thin. Put it in the refrigerator for 30 minutes.

You can start baking pancakes.

Preheat a skillet and start baking pancakes, brushing butter before each pancake.

These are the thin pancakes you get.

Stack pancakes. Set the table and enjoy.

Recipe 4: pancakes on Razgulay - 4th day of Maslenitsa

Thursday - the day of the beginning of the Wide Maslenitsa. Household work ceased, festivities began.

Entertainment was very different: sledding and sledding, fistfights and battles for snowy cities, sang carols, burned ritual bonfires (another relic of paganism) and jumped over fire.

  • Ryazhenka - 0.5 liters
  • Vegetable oil - 2 tablespoons
  • Eggs - 2 pieces
  • Sugar

Making the dough. Pour fermented baked milk into a bowl, drive in two eggs, a chip of salt, a tablespoon of sugar, 2 tablespoons of vegetable oil.

Mix well with a mixer. Add half a teaspoon of baking soda, mix.

Gradually sift flour into a homogeneous liquid mass. I ended up with about 5 tablespoons with a slight slide.

It is most difficult to describe the consistency, the dough should not be very liquid, but not thick either, it should pour well from the spoon.

Pour a little vegetable oil into a hot frying pan to oil the entire surface. And pour the dough with a ladle, turning the pan in a circle so that it spreads evenly.

I drip butter before each pancake. We put the finished pancakes in a pile, you can put a small piece of butter on each and dust with sugar. Serve with sour cream, honey, jam, condensed milk, or whatever your family loves most.

Recipe 5: Mother-in-law's evening - pancakes on the 5th day of Maslenitsa

On this day, the mother-in-law came to visit her son-in-law with a return visit, and she took with her a company of friends. The daughter baked pancakes for her husband and guests.

It is very convenient to bake rye pancakes on whey - the dough has a wonderful consistency. It spreads easily over the pan and bakes great. It is very important to sift rye flour before making pancakes: this step, in principle, will not be superfluous when working with wheat flour, but here it is simply necessary.

  • 2 eggs;
  • 1 teaspoon of sugar;
  • a pinch of salt;
  • 1 cup seeded rye flour;
  • 500 ml of milk whey;
  • 0.5 teaspoon of quicklime soda;
  • 5 tbsp. tablespoons of sunflower oil.

Break eggs into a deep bowl.

Add salt, sugar, beat with a fork, there is no need to use a mixer, you just need to stir. Sift the rye flour through a sieve (along with baking soda), first a few tablespoons.

Stir until the dough is thick.

Then pour in a little whey (milk, you can even bake pancakes in water, but then soda is not needed). Then again flour, again a little whey. And so alternate until all the flour is mixed into the dough. The dough at all stages of kneading should be thick. Then, by adding milk whey, bring the dough to the desired consistency. The most important point when baking rye pancakes is that the dough must be allowed to stand for at least half an hour so that the flour swells: if you neglect this rule, the pancakes cannot be turned over in the pan, they will break. If you doubt your abilities, then for the first time you can make pancakes from rye flour with the addition of a small amount of wheat.

Over time, pour in sunflower oil, mix.

After that, it is imperative to evaluate the consistency of the dough, since while it is standing, it thickens a little, and it may be necessary to add more whey.

Before baking the first pancake, grease the pan with sunflower oil or any fat, then this is not required: the oil in the pancake dough will perform the lubrication function.

Pancakes made from rye flour need to be baked a little longer than ordinary ones, in addition, you need to make sure that the rye pancakes do not brown too much, otherwise they will taste bitter.

At first glance, it seems that such pancakes must be eaten with something salty, but the opposite is true: due to the presence of rye flour in the dough, they turn out to be sweetish and are very good with jam and sour cream.

Recipe 6, step by step: Saturday - Cousin's gatherings

Young daughters-in-law invited sister-in-law and other relatives of her husband to visit. It is interesting that if the sister-in-law was not married, then the daughter-in-law invited her unmarried girlfriends, and if she was married, then married relatives would come to visit. The daughter-in-law had to give her sister-in-law a gift by all means.

Continuing the Shrovetide theme, I am sharing with you another recipe for pancakes with milk - this time we will cook oatmeal. Such pancakes are not only thin, but also very tender, soft, aromatic (a bit like oatmeal cookies) and very tasty. They can be served with jam, sour cream, honey, or filled with any filling (sweet or salty) of your choice.

  • milk - 1.5 cups
  • oat flour - 1 glass
  • chicken eggs - 2 pcs.
  • vegetable oil - 4 tablespoons
  • sugar - 2 tablespoons
  • table salt - 1 pinch

The recipe for these delicate and aromatic pancakes includes the following ingredients: oat flour, milk (any fat content - I use 1.7%), chicken eggs, granulated sugar, salt and refined vegetable (I have sunflower) oil. I use 250 ml glasses. So, 1 such glass of oatmeal is about 110 grams, and milk will need about 375 milliliters. All food should be at room temperature, so remove it from the refrigerator beforehand.

You can cook pancake dough in any deep dish. We break chicken eggs into a container, add salt and sugar.

After that, pour the remaining milk and again mix everything well or beat with a mixer. Due to this technique (when the liquid is introduced in parts), there will never be lumps in the pancake dough!

Pour odorless vegetable oil into the dough and just stir it in with a spoon or spatula. Leave the pancake dough to stand for 10 minutes so that the gluten in the flour swells - then the pancakes are elastic and will not tear.

Preheat a frying pan (I have a special heavy pancake maker) and pour a couple of tablespoons of dough. With quick movements in a circle, distribute the dough and bake the oat pancake on the heat just below medium until the underside is golden brown. For the first pancake, you can grease the pan with oil.

Then turn the pancake over and bring the other side to readiness. Similarly, bake the rest of the oat pancakes in milk until all the dough is over.

The oat pancakes are ready - if you wish, you can coat each with butter, then they will be even softer.

Help yourself, friends, to fragrant and very tasty oat pancakes. They can be served just like that, or flavored with honey, sour cream, jam or jam. A cup of hot tea or a glass of milk will also come in handy.

Recipe 7: Seeing off the Maslenitsa on Sunday

Seeing off Maslenitsa, or Forgiveness Sunday, is the main day of Cheese Week, a spell before the start of Lent. In churches, the rite of forgiveness was performed, the clergy and laity asked each other for forgiveness for all the grievances of the past year.

In the evening we remembered the dead, went to the cemetery.

  • pancake flour - 500 gr;
  • milk - 900 ml;
  • vegetable oil - 3 - 4 tablespoons;
  • chicken eggs - 1 pc .;
  • granulated sugar - 1 tbsp

Sift flour.

We heat the milk to keep it warm. Gradually add flour to milk, stirring all the time, so that there are no lumps.

Then beat one egg and pour into the dough.

Add sugar and vegetable oil there.

Mix everything thoroughly until smooth.

If the dough is too thick, you can add more warm milk or water. We heat the frying pan, Lubricate it with a little vegetable oil. I grease with butter only before baking the first pancake, because everything goes like clockwork.

Pour the dough into the pan with a ladle, spreading it evenly over the entire surface.

We bake on both sides.

Put the finished pancakes on a plate.

You can serve pancakes with anything. Everyone smears with what he loves: sour cream, jam or condensed milk. Bon Appetit everyone!

Bonus 1: Panitsa pie for Shrovetide

Banitsa pie is an unusually tasty dish of the Bulgarian cuisine. Moreover, it is prepared in a variety of ways and with a variety of fillings (with cottage cheese, lamb, herbs and tops, etc.). However, the classic Bulgarian recipe is salted banitsa with feta cheese and sweet banitsa with pumpkin ("pumpkin").

It is quite possible to cook a real Bulgarian Banitsa at home, although, we warn you, it is not very simple. But our step-by-step photo recipe will help you cope with all the difficulties: if you don’t figure something out, look at the photo - and everything will fall into place.

We will cook two Banitsas at once - with feta cheese and with pumpkin (this is how much dough from 1 kg of flour is enough). Accordingly, half of the ingredients are needed for one pie (but not for the filling!). If you don't have feta cheese or don't like it, replace feta cheese with cottage cheese (Bulgarians sometimes do this too).

Let's start cooking!

  • wheat flour - 1 kg
  • vegetable oil - 4 tablespoons in the dough, 10 tbsp. in the filling
  • apple or wine vinegar - 5 tsp
  • chicken egg - 1 pc in the dough, 4 pcs in the filling
  • salt - 1.5 tsp
  • water - 1 glass
  • feta cheese - 300 gr in the filling, 50 gr in the watering
  • yogurt - 100 gr
  • soda - 1 tsp
  • butter - 50 gr
  • pumpkin - 350 gr
  • sugar - to taste

In the sifted flour, make a depression and add salt, vinegar, vegetable oil, one egg and 1 tbsp. warm water. Knead a soft dough from all this.

We roll the dough into a kind of thick sausage and use a knife to separate small round pieces from it ( an even number is required).

After moistening your hand in vegetable oil, slightly crush each of the resulting balls, and then connect them in pairs and press the edges.

Sprinkle the resulting double cakes with flour on all sides.

We put the cakes in a single container, cover with a cloth and send them to the refrigerator or to a cold window for 3-4 hours.

In the meantime, we are preparing the filling of feta cheese and eggs. To do this, combine feta cheese, 4 chicken eggs and yogurt (it can be replaced with any other fermented milk product), mixed with baking soda. Mix everything thoroughly.

In a separate bowl, heat 10 tbsp. l. vegetable oil and throw in a piece of feta cheese with a piece of butter or margarine (of your choice).

We take one cake of dough and roll it into a thin layer on a table sprinkled with flour.

Then, using a rolling pin, transfer it to a separate oilcloth or tablecloth.

Already there we spread the filling on the dough and bend the edges in such a way as shown in the photo.

From above we distribute a mixture of sunflower and butter with feta cheese.

After that, we raise the edge of the oilcloth / tablecloth - and the blank for Banitsa itself rolls up into a tube.

The result should look like this.

Now we wrap it up with a snail and transfer it to a greased round baking dish.

We repeat all actions until the form is completed. Then we grease Banitsa with the rest of vegetable oil and yogurt.

We send the cake to an oven heated to 180-190 degrees to bake for 20 minutes, and then reduce the heat to 120 degrees (if it is not possible, just cover Banitsa with foil) and bake for another 20 minutes.

While Banitsa with feta cheese is baked, we begin to prepare its sweet version. To do this, three pumpkin on a medium grater and distribute it over the rolled out layer of dough, and pour sugar on top to taste.

However, before putting the sweet cake in the oven, grease not with butter and yogurt, but simply with milk.

As a result, it will turn out to be no less ruddy.

Bonus 2: Sbiten at home (step by step photos)

  • Water - 1 l
  • Cane sugar ("Demerara" from Mistral) - 4 tbsp. l.
  • Cinnamon (Ground) - 5 g
  • Ginger (Ground) - 5 g
  • Nutmeg (Ground) - 5 g
  • Bay leaf (medium-sized leaves) - 3 pcs

Heat the water on the stove. While the water is heating, prepare cane sugar "Demerara" from Mistral 4 tbsp. l. I'm not a sweet tooth, so it seemed a little sweet to me, but not cloying. I would also reduce the amount of sugar to 3 tbsp. l. Although the prescription would have needed even more.

When the water boils, dissolve the sugar in it.

Add spices. Boil. Boil for 10-15 minutes. If foam appears, then it must be constantly removed.

Remove from the stove and let it brew for about half an hour. Strain. Serve hot sbiten when ready. You can serve gingerbread cookies, cakes, cookies to sbitnu.

Bonus 3: sweet pancake rolls with fruits (step by step)

The basis of this unusual dessert is thin sweet pancakes. They go perfectly with cottage cheese and fruits, and cook very quickly. I propose to make pancake dough of two types - regular and with the addition of cocoa. The filling is fresh or canned fruits, delicate cottage cheese and thick sour cream. So, let's prepare sweet pancake rolls with fruit and cottage cheese.

Ingredients:

  • wheat flour - 1.5 cups
  • cocoa powder - 3 tbsp. l.
  • sugar - 0.5 cups
  • milk - 2 glasses
  • eggs - 2 pcs.
  • vegetable oil - 3 tbsp. l. for dough + a little oil for frying pancakes
  • salt - a pinch

For filling:

  • orange - 1 pc.
  • bananas - 2-3 pcs.
  • kiwi - 2 pcs.
  • cottage cheese (pasty) - 200 g
  • thick sour cream - 2-3 tbsp. l
  • sugar or icing sugar to taste.

Separate the yolks from the whites. Place the yolks with sugar in a spacious bowl in which you will prepare the pancake dough.

Beat the whites with a pinch of salt with a mixer until they become dense mass. To peaks - this means that when you lift the beaters of the mixer, there will be bumps on the surface of the protein mass - peaks, and they will not fall off. If the whites have fallen off, continue beating on high speed until thickened.

Mash the egg yolks with sugar. Pour in vegetable oil. It is better to take butter without flavors, refined so as not to interrupt the taste of the pancakes.

Pour warm milk into the egg mixture. Stir until sugar dissolves.

Add flour, beat the dough with a mixer. In consistency, it should turn out like liquid sour cream. Divide the dough in two (add cocoa to one).

Add half of the whipped egg whites to one part of the dough. Mix gently.

The dough will thicken slightly and air bubbles will appear on the surface.

Mix cocoa and 2 tbsp. l. Sahara. Add to the second part of the test. Beat with a mixer until the ingredients are completely combined. The dough will turn dark chocolate in color. Put the remaining whipped egg whites into it, stir.

The dough should stand a little so that all the small lumps disperse and dissolve. At this time, you can prepare the fruit filling for the pancakes. Sort the peeled oranges into wedges. Peel the kiwi and bananas, cut into long slices.

Mix curd with sour cream. Whether or not to add sugar is a matter of taste. Pay attention to this point: if you add sugar to the curd, the curd mass will become thinner, and when cutting the rolls will not look very neat. You will either have to clean up the traces of the cottage cheese or leave the cottage cheese unsweetened, but serve the rolls with a sweet sauce (you can sprinkle it with powdered sugar).

Preheat a skillet. For the first pancake, brush it with butter, pour in the dough and shake the pan from side to side so that the dough spreads all over the bottom. Brown the pancake on both sides over medium heat.

Bake chocolate crêpes in the same way. A baked chocolate pancake will be characterized by the characteristic streaks of a lighter shade.

Place the pancake on a cutting board. Lubricate it with curd mass. Place the fruit filling in the middle (for a chocolate pancake it is better to use light-colored fruits).

For pancakes made from regular dough, choose a bright filling - oranges, tangerines, kiwi.

Roll the pancakes into tight rolls. Cut off the edges.

Use a sharp knife to cut into equal pieces. Arrange the sweet rolls on plates, alternating between the chocolate and the light rolls. You can serve dessert with any sweet sauce, jam, honey.

It is difficult to find a hostess in Russia who would not bake pancakes and pancakes for Maslenitsa. Real Russian pancakes are made from yeast dough, the dough for them was put even from the night and baked without fail in cast-iron pans. Not everyone will be able to bake thin, lacy pancakes, despite the seeming simplicity of the process. There are subtleties in this simple matter:

  1. The first trick when baking pancakes for Shrovetide is the indispensable sifting of flour before kneading the dough. This is especially important for yeast pancakes. Then the dough will rise much better.
  2. The second trick is to heat the frying pan very well, and only then pour the dough onto it. You can grease the pan with a piece of salted bacon, put on a fork. This must be done before each pancake. Or you can add a spoonful of vegetable oil to the dough itself, and then you will need to grease the pan only once, before frying.
