Currant liqueur for the piano. Cyrus is a cocktail invented by a priest. The process of making the Kir Royal cocktail

Cyrus Royal is one of my favorite cocktails, which I have already seduced very, very many of my friends (and spouses of friends). When I go to Russia, I try to bring aperol and cream de cassis with me. And there is always something to dilute with! And we have such sincere gatherings that we just want to repeat it every time ...

If we talk about the reputation of the Kir Piano cocktail, then it was reserved for itself by the glamorous high society. Well, not the old aristocracy, but all sorts of popular artists, singers, newly-made rich people ... It's not that my friends and I belong to these circles - I just wanted to say that the fame and target audience of Cyrus piano is better than, say, at Long Island ice tee. It is quite possible to serve it in a decent society.

New Year is such a holiday for which it is especially easy for Kir to prepare the piano. Because there is no New Year without champagne - and Kira does not have a grand piano without it either. Simple Cyrus - it happens, he is on dry white. And the royal one, for pianos - on sparkling wine (after all, you and I will not fix ourselves right on champagne from Champagne, right? Everyone will choose for himself the sparkling wine that is available to him and he likes).

And crème de cassis is a popular blackcurrant liqueur from the French city of Dijon. Honestly, I do not know how popular it was before the appearance of the Kir cocktail, but over six decades of its existence, this drink made the crème de cassis liqueur famous far beyond the borders of its homeland.

The liquor that I use is, as you can see, the one from Dijon. His fortress is 18%. I am often asked if it is possible to make a Kir royale cocktail with homemade blackcurrant liqueur. Honestly, I haven't tried it myself, but I admit that it is possible if your homemade liqueur is very soft, without the slightest feeling of strong alcohol, with a sort of fortified currant wine taste. There is one in the bins - try it, I think it will work out well with it too.

If the temperature of the wine for the Kir cocktail does not play a special role, then the sparkling wine for the Kir Royal cocktail is cooled to the temperature recommended on the bottle.

The Kir Piano cocktail is served in champagne glasses. In cups or flutes - no difference, both are allowed.

Champagne and sweet liqueur have a big difference in density. Therefore, if you pour creme de cassis into champagne, then at the first moment in the glass even a slight layering effect appears, as in Sunrise tequila. If you do the opposite (pouring champagne into liqueur), then mixing is better. I think that everyone here will have to choose what they like best. There is no single methodology.

The Kir Royale cocktail does not have a strict ratio of ingredients. The share of liqueur can be from 30 to 70%. What you see with me is with a minimum. With a lot of the Kir Royale cocktail it will be cherry red.

Connoisseurs of French sophistication and refined taste in drinks should definitely try Kir Royal, a cocktail that has absorbed all the grace of the country of fashion and wine. Not very strong and with excellent taste, it will appeal to both ladies and men who are not inclined to get drunk (at least too quickly). This cocktail will be great at light, not very formal celebrations - weddings or New Years. For anniversaries, especially for those "who are over ..." he has too light and not solemn "character".

Heroic prototype story

"Cyr Royal" is a cocktail that has become a kind of heir to the drink famous throughout France. The original owes its appearance to Felix Keir, who was ordained in 1901 and served as a priest in the parish until the moment when Nazi Germany occupied his homeland. Cyrus did not stand aside, like many of his colleague clergymen. He became an active participant in the French Resistance and helped a lot in organizing the escape of 5 thousand people imprisoned in the Longvik concentration camp. The Gestapo figured it out, caught him, and the padre was to be executed. He escaped death only because of his rank.

After the war, the brave priest became a knight of the Legion of Honor, the highest honor in France. And at the same time he received the post of mayor of his hometown, Dijon. Its economy was in complete decline, and there were no funds to restore it. In addition, the red currant plantations for which the province was famous were destroyed, and the white wine produced here was considered completely ordinary. To fill the city coffers, the mayor invented a cocktail of wine and black currant, which gained popularity and got his name as the name.

The appearance of the "Royal" version

When the post-war disasters were largely overcome, the economy was restored, and the store shelves were full, “Kir Royal” - a cocktail in which ordinary wine was replaced by sparkling wine - gradually began to gain popularity. They say that the first step in this direction was made by winemakers from Italy, who promoted sparkling wines made with a quick hand to the masses.

In France, to this day, restaurants accept orders for both the Kir variant and the Kir Royal variant. You will be served a cocktail in any case, only the waiter will specify which version you are interested in. Moreover, the clarification can relate to both components of the drink.

"Kir Royal", cocktail: recipe and preparation

One of the advantages of the famous drink is the simplicity of the composition, the combination of its components into a single whole and serving. No special bartender receptions or special equipment. In the glass merge blackcurrant liqueur - preferably French Creme de Cassis - and dry champagne. Everything is gently mixed and served - without straws or any decorations. Unless you can attach a fresh berry to the edge.

The only thing that the Kir Royal cocktail can be puzzled with is its composition. In the original recipe, the wines were combined in a ratio of 9: 1. However, now you can be served a cocktail in a ratio of 4: 1 or even 3: 1. However, this is not considered a crime against taste. The volume fraction of the liqueur makes the cocktail sweeter, so such variations are usually preferred by ladies and those with a sweet tooth.

Some nuances

Despite the simplicity of preparation and the small number of components, some subtleties should be taken into account if you want to enjoy a cocktail from the heart.

First, there is no ice in the glass, and cannot be introduced categorically. And white wine tastes better when chilled. So before preparing the drink, both the bottle and the glass must be chilled. For this purpose, ice cubes can be thrown into the latter, only before using it must be carefully wiped off.

Second, the order of the merge. In principle, what to pour first does not seem to matter. However, liqueur is thicker than wine, and if it is placed first in the glass, it will take more effort to stir. At the same time, champagne will lose a significant part of its "bubbling".

Thirdly, when cooking on your own, you should not be upset if you don't have Creme de Cassis or its equivalent at hand. Although the French, without losing the name of the cocktail, change blackcurrant liqueur only for peach or blackberry, it is perfectly acceptable to take any berry. Especially approved is the "Kir Royal" (cocktail) with liqueurs made from raspberry, cherry or strawberry.

The Kir Royal cocktail is perhaps the most famous of the Kirov family. It seems that he even overshadowed his fame with his prototype cocktail made of white wine with currant liqueur. What is the difference between Cyrus Royal and regular Cyrus, except for the use of sparkling wine instead of the usual one?

Royal Cyrus has a different story, a different reputation, at least in Germany. If an ordinary Cyrus is “well, a cocktail; just a cocktail; cocktail - and cocktail ", then Cyrus Royal -" oh-oh-oh! it's a cocktail - so cocktail! cocktail for all cocktails! " Why? There is no rational reason for this. It's just that for some reason he fell in love with West German chiceria - representatives of the beau monde of the 60s and 70s, the then trendsetters and, accordingly, all their imitators.

Therefore, Cyrus Royal is, according to the ideas of the Germans, something that is drunk by those people who eat black caviar for breakfast. Cyrus Royal is gold, 3-carat diamonds, furs, sports cars shiny with varnish. This is a cocktail of people who caught their luck by the tail (well, or were already born with a golden horseshoe in hand). But Cyrus Royal is also false eyelashes, tinsel shine, window dressing and chic on the border with vulgarity.

This cocktail is a symbol, a byword, and a famous soap opera was even named after him, immortalizing those who drank it. So Cyrus Royal, having become the property of the general public, ceased to be a symbol of a beautiful life and ... became a symbol of dreams about it, fantasies about it, teasing over chicery.

Alcoholic

The Royal Kir cocktail recipe contains the following ingredients:

The history of the "Royal Kir" cocktail recipe:

Mid-19th century, France, Burgundy. The Royal Kir cocktail recipe is a variation of the earlier Kir cocktail. According to many people, and what has already become the official version, Felix Cyrus became its creator. It is not difficult to guess in whose honor this drink was named. (^_^) This man was a priest, a member of the resistance, and finally a mayor. Offering a cocktail to almost everyone, Felix still achieved his popularity. Now the drink is known not only in France, but also far beyond its borders.

The following recipes for the Royal Kir cocktail are possible:

  • The Kir cocktail? replacing champagne with dry wine;
  • Cocktail "Kir Imperial"? contains only champagne and raspberry liqueur;
  • Cocktail "Korn Kir"? instead of wine there is vodka or brandy;
  • Cocktail "Cardinal"? replace white wine with red (and it really looks like (^ ^) );
  • Cocktail "Kir Petillant"? not a simple wine, but a dry sparkling wine

Creme de cassis is a liqueur from Burgundy itself based on black currant and alcohol.

A few words about the Royal Kir cocktail:

Deliciously delicious. The Royal Kir cocktail recipe is as simple as its regular Kir predecessor. The only thing that I would like to note separately is the difference in tastes, which is explained not by the type, but by the variety of wine brands. However, as practice shows, dry wine will be the best drink for black currant. And if you remember ... the taste and color, there is no friend! (^_~)

Now directly to the recipe for the Royal Kir cocktail.

Pour all the cocktail ingredients into a wine glass (not a narrow glass with a long stem). Stir everything with a bar spoon.

The Kir Royal alcoholic cocktail will undoubtedly appeal to connoisseurs of refined taste and French charm. This mix does not stand out for its special strength and does not have a too solemn "character", it is mainly appreciated for its soft, refined taste, which conquers the hearts of the beautiful half of society literally a moment after sample.

The alcoholic drink Kir is more often served at family celebrations or friendly parties than at official business corporate events - such is the spirit of this light and friendly cocktail. Let's discuss the traditional recipe and several variations of the Kir Royal cocktail, as well as take a closer look at the composition of the ingredients used and their proportions.

Few can boast of such a heroic history of origin as the Cyrus Royal mix, whose name originally sounded like Cyrus, after the name of a French priest who was an active participant in the French Resistance and helped a considerable number of people escape from the concentration camps of Nazi Germany.

The heroes of the brave priest did not end even after the end of the war - when the economy of his hometown of Dijon was in decline and there was nothing but plantations with currants, the padre (at that time he received the post of mayor) came up with an uncomplicated light drink, the recipe of which we will consider now.

Recipe for the royal version of Cyrus Royal

When the post-war disasters were overcome in France, the economy recovered, the store shelves were filled and the popularity of the Cyrus mix began to gain more and more popularity, then the French cream of society slightly changed the recipe, replacing ordinary wine with champagne and simultaneously changing the name to Cyrus Royal. Let's take a look at the composition and sequence of preparation of the royal drink.

List of components

Cooking process

  1. Slowly fill the glass with champagne, holding the bottle at an angle of 45 degrees in order to avoid a lot of foaming.
  2. Pour the liquor in a thin stream along the edge of the glass.
  3. Stir the ingredients gently until an ideal homogeneous consistency is obtained.
  4. Any fresh berry can be used as decoration.

The subtleties of cooking Cyrus Royal

Despite the simplicity of preparation and the small number of components, it is still worth considering some subtleties if you really want to make an incomparable cocktail.

  • Cyrus Royal is served to awaken the appetite before a meal.
  • To get a real aesthetic pleasure, drink the drink in small sips, but for a fairly short time, while the champagne bubbles remain.
  • The drink is served in tall, thin glasses with a short stem, but no one will forbid you to make an exception and serve the drink in whatever dish is at hand.

  • Never fill the glass with ice... To heartily enjoy the wonderful taste of the drink, be sure to chill white wine or champagne to 13-15 degrees. Moreover, in addition to the bottle of alcohol, I recommend sending the wine glasses in which you are going to serve the mix to the freezer. As a last resort, the glass can be filled with cubes for quick cooling, but must be emptied and wiped dry before direct preparation.
  • Next, let's talk about the sequence. In principle, it doesn't really matter what to fill in first. However, the liqueur has a thicker consistency, and if you pour it first, you will have to make more effort to stir the mix. Moreover, during this stirring, champagne will lose a significant part of the sparkling bubbles, which play an important role in the attractiveness and appetizing of the drink.

  • If you do not have blackcurrant liqueur on hand, do not be upset.- the French themselves, the inventors of the drink, change it to blackberry or —peach—. It is also perfectly acceptable to use any other berry liqueur.
