Important! While enjoying your own alcohol, do not forget that moonshine liqueurs are a pretty strong drink. Use it wisely.

Liqueur is a low-strength drink that has a sweet, pronounced taste and a viscous consistency. Such a drink has been known since ancient times. It is prepared with fruits, berries, herbs and various spices. Some recipes have been kept secret since the creation of the drink, but there are many ways to suggest how to make analogs at home.

Liqueur at home is made by infusing ingredients on an alcohol basis. Due to the simplicity of the recipe and the variety of ingredients, a wide field for imagination opens up in the preparation of this drink. Any fruit or berry can be used. Everything is limited only by personal taste preferences and finances.

The first questions that arise for beginners: what the liquor is made of and how to make it. You need to sort it out in order. The drink, called liqueur, is prepared with vodka or alcohol. Moonshine is less commonly used. The alcohol base is chosen based on personal preference, since there is not much difference between liqueurs made from vodka and from alcohol.

The next equally important component is the foundation. It can be fruity, berry, creamy, honey, herbal, coffee, mint, vanilla, or coconut. These are just some of the most popular fillings. In this case, the choice is limited only by imagination. Sometimes even vegetables are used.

The third ingredient that is always present in the composition is a sweetener. Its role can be granulated sugar or honey. In the first case, a syrup is prepared from sugar and added to the rest of the ingredients. The use of honey makes the drink richer and softer in taste. But we must not forget that this product changes its structure when heated above 40 degrees. Therefore, it is important to consider this feature when choosing a recipe.

The preparation method in all cases is quite simple. The main part is always mixed with alcohol and this is where the preparation is completed. Recipes for homemade liqueurs differ only in the preparation of the base. If fruits or berries are used, then puree or juice is made from them, which are mixed with sugar or honey. In the case of using coffee, mint or coconut, preparing the base is a little more difficult. Such products need to be kept in alcohol for some time in order for them to convey their taste and aroma to it.

In any case, no complicated or expensive cooking apparatus is required. The main set required is pots, a blender and various containers for mixing and storing the finished drink. You don't even need a kitchen scale to make liqueur. Observe the proportions, of course, is important, but this is exactly the drink that is prepared to taste. Everyone creates their own liqueur, complementing it with the final touches.

Recipes

Recipes for liqueurs are endless, as they are made from almost all sweet fruits, as well as many other ingredients. Drinks differ in flavor base, degree of sweetness, astringency and complexity of the recipe. All homemade liqueurs are delicious in their own way, so everyone can choose something for themselves.

Homemade liqueur is otherwise called Russian liqueur. But it is widespread not only in Russia. It is enjoyed with pleasure in Belarus, Ukraine and other countries of Eastern Europe. This popular alcoholic beverage uses alcohol, sugar and fruit. Sometimes you can find only two ingredients in recipes, for example, sugar and berries or alcohol and fruits. In order for the liqueur to be prepared, the composition needs to go through a fermentation process.

Alcohol is replaced with sugar during cooking and fermentation occurs - as a result, alcohol appears.

Of the fruits used to make Russian liqueur, the most popular are cherries, plums, cranberries, raspberries and gooseberries. Even the names of the liqueurs speak of belonging to one or another gift of nature: cherry, robin, plum and so on.

Technology making liqueur at home is simple. First, you need to prepare a container where the future liqueur will be contained. It is thoroughly washed and dried.

Best fit glassware... It can be three or more liter jars. Pour pre-washed fruits into the bottle in a ratio of 4/5 of the total volume. Pour granulated sugar on top. The berries should not have cuttings. If you use berries such as, for example, raspberries, then you should not wash them first.

Capacity with future liqueur it is forbidden close tightly with a lid. It is covered with several layers of gauze or natural dense fabric.

They put the container under the sun's rays, so the fermentation is more complete.

The mixture stands under the sun for about five days, after which it is removed to a dark place and left for fifty days for further ripening. When the liqueur has just begun to ferment, they try to shake it daily.

The number of days for fermentation can be different and depend from the berries that are included in the base of the liqueur. Distinguish between early ripening, late ripening and medium ripeness berries.

  • Berries that ripen within thirty days are raspberries, strawberries and blackberries.
  • Liqueurs with medium ripeness are obtained from plums, cherries, viburnum and lingonberries. In order to prepare liqueur from them, you need to wait 50–70 days.
  • If you decide to make apricot, apple, mountain ash liqueur or gooseberry, pear and quince liqueur, then be prepared for the fact that you will try the drink only after five months.

Liqueur recipes

Cherry liqueur with sugar

The cherries are washed with running water and the seeds are removed. Placed in a glass container with sugar and set in the sun for five days to ripen. The jar is covered with a cloth and tied around the throat so that it is held.

Periodically shake the container. After five days, the fabric is replaced with a polyethylene bag and the liqueur is placed in a dark place for a period of one month. When the liquor is ready, it should be cleaned of impurities and bottled in pure form for further use. The finished drink is stored in a cool place.

Many people like mixed liqueurs. That is, during the laying of fruits, space is left in the container for additional bookmarks, and as the berries ripen, they are added to the container, not forgetting to fill each layer with sugar. For a sophisticated taste, add at the end of the juices lemon or orange.

Pouring cherry with vodka

The components for the preparation of this liqueur are taken in such proportions: for three kilograms of pitted cherries, one kilogram of sugar and a liter bottle of vodka. After the washed and sorted cherries are covered with sugar, they are left in the sun for 1.5 months. The container in which the cherry ferments is tied with a cloth or three layers of gauze.

After the cherry has fermented, the juice is poured into bottles and placed in a dark, cool place. The remaining berries are poured with vodka and infused for thirty days. Put in the sun not necessary, normal room temperature is sufficient. A month later, the tincture is filtered and mixed with the juice obtained after fermentation. Usually left in bottles third places to add alcoholic tincture. Bottles are corked and stored in a cool, dark place, opening as needed.

Such homemade liqueurs OK preserve the taste and smell of cherries, and also perfectly preserve all the vitamins and microelements inherent in this berry.

Pouring from dried cherries and alcohol

This drink is called differently cherry... He prepares as follows. The washed and sorted cherries are slightly dried in the sun and poured into a glass container. The number of berries is arbitrary, as is the amount of alcohol.

After the berries have settled down, they are poured with alcohol so that all the cherries are under the liquid. Two weeks later, this vodka is drained, and the berries are poured over again. Two weeks later, a similar procedure is performed. Thus, we have accumulated a sufficient amount of vodka, which is mixed with each other and returned to the container for the cherries.

Now you can add sugar to taste, stir, filter the liquid from the berries and bottle. Cherry is stored very good and long.

Polish cherry liqueur

To prepare it, you will need more granulated sugar than usual. For one kilogram of washed and pitted cherries, take eight hundred grams of sugar and two hundred vodka. Cherries with sugar are left to ferment for only two days, after which vodka is added.

The container with the future liqueur is set aside for fifty days in a dark place. The room where the liqueur will ripen should not be cold, but the sun's rays should not fall on it either.

But such a spicy liqueur is obtained by the French.

Homemade liqueur in French

To prepare it, you will need several glass jars with lids. They put washed cherries with slightly trimmed stalks. Banks are closed and placed in a water bath.

Ten minutes later, they take it out of the boiling water, open it and add vodka to the jars. The liquid should slightly cover the berries. Each jar is filled with cinnamon, cloves and grated orange zest. Fall asleep with sugar and close the jars. Within seventy days, the jars are taken out and shaken. This is how the liqueur is prepared in French.

Often homemade liqueur recipes contain tons of ingredients. For example, it can be lemon peels, cinnamon or mint. Delicious cherry liqueur is obtained from cherries that have been previously dried in the oven.

Only you need to dry slightly so that the berries do not dry out and wrinkle. Prepared cherries are placed in a container and poured with vodka. Insist for one week in a cool place. Then they cook it like a cherry.

Instead of vodka, you can use purified moonshine. In this case, the cooking recipe is preserved. fully... Moonshine should be no more than forty-five degrees, like vodka. I select ripe fruits for liqueurs, even overripe ones.

In addition to vitamins and minerals, the tincture is appreciated for its diuretics properties. In addition, homemade liqueurs made with our own hands without adding preservatives and dyes are excellent stimulate processes of digestion and metabolism. It is not recommended for children to drink even in a diluted form due to the alcohol content in liqueurs.

Sometimes in recipes you can find recommendations to replace vodka and moonshine with more elite drinks: gin or cognac, but as practice shows, the taste of the liqueur is lost and acquires the qualities of this alcoholic beverage.

You can not remove the seeds from the berries, since there is very little hydrocyanic acid in cherries. In the recipe for French liqueur, they even leave cuttings... The color of the liqueur will directly depend on the color of the berries and fruits added according to the recipe. Do not use rotten fruits and unrefined moonshine, otherwise the taste and smell of the liqueur will be spoiled.

Rowan pouring

We carefully examine the rowan berries and rinse them. After the mountain ash dries, it is lightly baked in the oven. The berries must not be allowed to dry out, they must be soft, but not dry.

Rowan is placed in a glass container so that it fills two-thirds of the entire space in the container. Now we pour moonshine or vodka to the edges of the container. To rowan tincture it will take at least fifty days to prepare. After this period, you can see an amber liquid, which is carefully poured into bottles and sugar is added.

Add to the container and pour vodka so that all the berries are covered. Fifteen days later, the alcohol is drained and now the gooseberries are poured with wine. After insisting for ten days, the composition is heated and sugar is dissolved in it.

After a week, drain the liquid and mix it with the alcoholic tincture obtained the day before. The finished gooseberry liqueur is bottled and hidden in a dark, cool place.

For one kilogram of gooseberries, you will need a half-liter bottle of vodka or moonshine, the same amount of wine and 0.3 kg of granulated sugar.

Pouring jam

If you have a lot of jam prepared, then you can make a liqueur from it. Unlike previous recipes, such a liqueur turns out to be somewhat coarser, perhaps not so tasty, but it is better to cook. quickly.
