To make a pie, we need:

150 g buckwheat

1 onion
Water (for cooking potatoes - 500 ml; for cooking buckwheat - 250 ml.)
30 gr. raw yeast
1 tbsp Sahara
2 stacks flour (glass capacity 250 ml.)
150 ml. potato broth
Vegetable oil
Sesame (seeds).

Cooking method:

And these are the products that you will need to make a lean potato pie with buckwheat.

Prepare the dough: grind the raw yeast in a place with sugar, put in a warm place for 20-25 minutes.

We clean and boil the potatoes (you will need 1 pc in the dough), prepare the mashed potatoes, do not drain the broth, it will also be needed in the dough.

Add warm potato broth, mashed potatoes, salt, 2 tablespoons to the yeast that has come up. flour, mix, cover and put in a warm place for half an hour.

In the matched dough, add the remaining flour in portions and knead the dough.

Put the dough in a cup, cover and put it back in a warm place for another half hour.

During this time, we will prepare the filling, boil the buckwheat until tender, cook mashed potatoes from the rest of the potatoes, onions, pre-peeled and finely chopped, fry until golden brown. Combine the prepared ingredients for the pie filling, salt and mix. Ready!

And the dough came up!

Divide the dough into two parts - larger and smaller.

Cover a baking dish, size 20 -25 with baking paper oiled with vegetable oil, roll out a larger part of the dough, put it in a baking dish, form high sides, spread the filling evenly.

Next, we roll out a part of the dough, which is smaller into a layer according to the size of the mold, cover the filling and pinch the edges. Lightly fry the sesame seeds. Grease the cake with vegetable oil and sprinkle with fried sesame seeds.

We bake the cake at a temperature of 200 degrees for 20-25 minutes until golden brown.

Then we take the cake out of the mold, free it from the paper, cut it into pieces and serve.

This pie is delicious, both hot and cold. It will also stand in the refrigerator for 4 days. And you can reheat in the microwave (it will be as soon as it is out of the oven). It is served with borscht or broth (instead of bread), as well as with a jellied tongue, fish or jellied meat.

Girls try it, the pie is really tasty. You need to eat it warm, with sour cream. And the next day, if you heat it up in a pan, it’s generally delicious. (my little buckwheat does not particularly respect, but he eats the pie with great pleasure.)

Fried pies with potatoes and buckwheat ...

Once upon a time, a very long time ago, about 17 years ago, for me such a combination of products at first seemed strange, until I tried to eat such a pie, then my hand itself reached for the additive, then again and again ..

This recipe was shared with me by my dear mother-in-law Antonina Vasilievna, who lives in the Smolensk region, and she, in turn, got the recipe from her mother. So this recipe has long been in her family, and now in mine, and has taken root very firmly. The pies are very tasty, nourishing, with a pleasant, barely perceptible, nutty taste, which is given by fried buckwheat.

Antonina Vasilievna always serves these pies with pickled or pickled cucumbers, sauerkraut. (well, and on occasion, and will put cold vodka). This will create an unmatched family dinner, warm and cozy! What I wish for you too!

So, the recipe for fried pies with potatoes and buckwheat, let's go ...

Composition:dough - flour - 600 g, milk - 300 ml, yeast - 10 g, salt - a pinch, sugar - 1.5 tablespoons, butter - 30 g

filling - potato - 1 kg, buckwheat (raw) -150-200 g, salt, butter - 50-70 g, vegetable oil for frying pies.

Preparation: for the dough, sift flour into a saucepan or deep bowl, add yeast, sugar and salt, pour warm milk. Knead a smooth dough, at the end add butter at room temperature. Knead again and remove for 3 hours in a warm place. Check every hour and knead the dough with your fist.

For the filling, peel and boil the potatoes, salt, mash them in mashed potatoes, add butter.

Wash the buckwheat, put it in a pan with vegetable oil and fry for 10-15 minutes over high heat until slightly darkened and a nutty smell appears. Put buckwheat in a saucepan with mashed potatoes, mix well.

The filling for the fried pies is ready. It needs to be cooled.


The dough will increase in volume, knead it again, form a sausage and cut it into equal pieces

Roll each piece with a rolling pin into a pancake, in the middle of which put the cooled potato filling (1 tbsp)

Pour vegetable oil abundantly into a wide frying pan, and fry the pies on both sides for 7-10 minutes over moderate heat

Serve pickled or pickled cucumbers, sauerkraut with hot fried pies with potatoes and buckwheat.

In Western Ukraine we have such pie probably every housewife bakes. It's incredibly tasty, filling, and easy to make. And since, the dough for this pirogue kneaded by my beloved assistant - bread maker Moulinex, I just have to prepare a delicious filling. In addition to traditional buckwheat and potatoes, I added fried porcini mushrooms - it turned out yummy! Pie turns out to be large, so if the family is small, you can use the half recipe. I like it very much so that the dough is very thin, but the fillings, so that there is as much as possible. Such pie with buckwheat and potatoes very suitable for Ukrainian borscht.

For cooking pie with buckwheat and potatoes we will need:

For cooking test(1000 gr.) We need:

  • 605 gr. wheat flour
  • 330 ml. water
  • 2 tbsp vegetable oil
  • 1.5 tsp salt
  • 1 tbsp Sahara
  • 2 tbsp milk powder
  • 13 gr. fresh yeast

For cooking toppings we will need:

  • 10 potatoes
  • 1 cup buckwheat
  • White mushrooms
  • 2 onions
  • Vegetable oil
  • Salt, pepper to taste

Everything dough ingredients put the bread machine in the bucket and turn it on.
I have this program № 1 and called WHITE BREAD.
The total time of this program is about 3 hours, so it is necessary that the dough is kneaded for 2 hours and then the bread machine must be turned off.
While the dough is growing, we cook pie filling.

Peel the onion, chop finely and fry in vegetable oil.

Add White mushrooms, salt, pepper and fry until tender.

Buckwheat we sort out, wash and set to cook. (I cook in the microwave for about 15 minutes)

Potato peel, and set to simmer.
When the potatoes are soft, mash them like mashed potatoes.

Combine potatoes, buckwheat porridge and mushrooms with onions and knead well.
Add salt and pepper if necessary.

We follow how our dough.

When dough will be ready, takes it out of the bucket onto a cutting board, divide it into two equal parts.

Grease a baking sheet with vegetable oil.

One piece test swing into a rectangle and spread on a baking sheet.
