After you have prepared all the ingredients, you need to chop the garlic, chop the herbs and crush the pepper. We divide the available cucumbers into two parts, five kilograms each. Rub the first five kilograms on a grater and grind with salt. Put the rest of the cucumbers with dill in a deep and large bowl, season with seasonings and salt, then add the grated cucumbers. And this salad is for lovers of dishes with a light spice. If overripe cucumbers are seasoned with vinegar and vegetable oil, the taste will be incomparable. To do this, take:

  • cucumbers 2 kg
  • granulated sugar 100 gr
  • vegetable oil 100 ml
  • 70 g vinegar (9%)
  • salt 2 tbsp. spoons
  • a bunch of dill
  • ground black pepper 1 tbsp. a spoon with a slide
  • garlic - 2 cloves

Cucumbers that are overripe and not suitable for consumption in fresh, since they have become overly soft and slightly lethargic, they will become an excellent base for cucumber caviar. To prepare it, you need the following products:

  • 6 large cucumbers
  • one onion
  • 5 ripe tomatoes
  • three carrots
  • 2 sweet peppers
  • salt - 1 teaspoon
  • ground black pepper to taste
  • sunflower oil

First, peel the cucumbers, finely chop them into cubes. We do the same with onions and peppers. Grate the carrots, turn the tomatoes into porridge. For cooking, you need a dish, the bottom of which we fill with vegetable oil. We spread the sliced ​​cucumbers on the bottom of the bowl and simmer until at least half of the juice has evaporated. Cooking requires:

  • cucumbers 1 kg
  • 3 cloves garlic
  • small horseradish root
  • salt - 2 tsp

  • mustard - 2 tsp

We wash the cucumbers, peel them, cut them into squares or into circles, add salt and leave them alone for 12 hours. Drain the released juice, and put the cucumbers in the jars. I send them to the warmed up with sunflower oil frying pan and begin to fry.


At this time, I clean and chop peppers, onions and carrots not large.


When the cucumbers become transparent, add all the prepared vegetables to them, except for the tomatoes.


Tomatoes are known to slow down the cooking speed of other vegetables, so I add them last. So, I'm stewing vegetables over medium heat. After 25 minutes from the start of cooking, add chopped tomatoes, salt, pepper to taste.

  • 100 ml of wine vinegar (can be replaced with apple cider or table vinegar, but in a smaller amount - 70 ml).

Preparation:

  1. First, prepare the marinade: bring water to a boil, pour vinegar into it, keep it on fire for a couple of minutes, remove from the stove and leave to cool.
  2. Prepare the cucumbers: cut off the peel from them (do not spare, remove it in a thick layer), remove the seeds, cut into thin longitudinal slices (about 0.5 cm).

  2. Chop the carrots on a coarse grater, chop the onion and pepper into thin half rings, finely chop the garlic.
  3. Heat the oil in a deep bowl and add the cucumbers. Fry them until transparent and only then add the rest of the vegetables in the following order: carrots, after 10 minutes - tomatoes, after another 5 minutes - onions, garlic and peppers.
  4. Simmer the vegetable mass over low heat, stirring occasionally, for about 10 minutes, add salt, herbs, then simmer for another 10-20 minutes (the vegetables should become soft) and add citric acid.
  5. Stir the vegetable mixture, immediately turn off the burner and put the mixture in sterilized jars, roll up.
  6. Turn hot containers over, cover with something warm and leave until they cool completely.
  7. In the future, the cucumber stew is kept cool.

  • 6 tbsp. l. with a slide of sugar;
  • 1 flat st. l. salt.

Preparation:

  1. Peel the vegetables, cut into four to five pieces, cut out the seed nests.
  2. Pour a spoonful of mustard, a clove of garlic, a piece of horseradish, peppers (as you see fit) into each jar, put dill and lavrushka.
  3. Boil the marinade, pour over the jars.
  4. In a large container, pour the cucumbers with warm water and pasteurize from the moment of boiling for 2-3 minutes. Place the jars with twists down and leave to cool.
