For any harvest, it is best to take ripe and unspoiled fruits. But in this case appearance has no berries of great importance: you can use berries that are not very beautiful, slightly crumpled, slightly overripe or even slightly unripe.

Rinse the strawberries well before cooking.

Remove stalks, leaves and dry on a towel or sieve. If you dry on a towel, keep in mind that it is unlikely that you will be able to wash the juice of the berries later, so use a cloth that you will not mind throwing away.

Prepared berries must be weighed and take sugar 1 to 1. Put the berries in any sufficiently deep bowl and cover with sugar.

Grind the berries with sugar using a blender.

You will get a pretty nice and relatively thick mass.

This mass is "packaged" in (plastic cups or containers). If the strawberries will be stored in the refrigerator with sugar, make a sugar cork at least 1 cm thick on top.

You can store strawberries mashed with sugar in the refrigerator or in the freezer. In the refrigerator, the shelf life is up to 6 months. In the freezer up to 12 months.

If you will be storing in the freezer, then fill the containers not to the very top, because during the freezing process, the mixture will slightly increase in volume. The sugar prevents the mixture from hardening to a very hard state and can be easily cut with a knife or separated with a hot spoon.

You can store strawberries, grated with sugar, all winter, using it in its pure form, adding to ice cream, compote, jelly.
