And it turned out that I’m not the only one who rarely cooks liver dishes. Therefore, today I decided to write another recipe to remind housewives that such wonderful cutlets can be made.

In principle, you can replace some ingredients to suit your taste or simply add something else, but I prepared these cutlets exactly according to the recipe that I was accustomed to since childhood.


We wash the liver and cut it into large cubes.


Then you can put it through a meat grinder, but I don’t have one, so I used a blender.


I chopped the onion in the same way.


Put it all in a bowl.


Add 4 tablespoons of semolina there.


Beat in one egg.


Three small carrots on a fine grater and also send to the liver.


Mix all this well and add salt. You can, of course, add some more seasonings, but I like the taste of liver and didn’t want to interrupt it with anything.
We get a slightly runny mass, which is why these cutlets are sometimes also called liver pancakes.


Heat the frying pan, pour a tablespoon of liver into the frying pan (pour 1-1.5 tablespoons of minced meat onto one cutlet) and fry the cutlets on both sides. They fry quite quickly.


It turned out to be 20 cutlets, each about 30 g. They were served with buckwheat porridge and sauce as a side dish; you can serve vegetables, although in principle you can make sandwiches with them or just serve them yourself.

  • Rinse the liver under running water, remove the film and cut into small pieces;

  • Now you need to mince the offal and the prepared vegetable. Of course, it is permissible to grind the ingredients with a blender, but from experience we can say that in this case the cutlets will turn out less “airy”;
  • Beat a chicken egg into the prepared minced meat, add semolina, salt and your favorite seasonings, mix everything thoroughly. Let the resulting mass stand for a quarter of an hour;
  • After 15 minutes, place the workpiece again and you can start frying. Armed with a tablespoon, place the minced liver in a frying pan with heated vegetable oil. Fry the cutlets on both sides and serve.

Recipe for liver cutlets from beef liver with semolina

Not only pig liver is suitable for cooking. Cutlets and beef offal are very tasty.

To prepare the dish you will need:

  • beef liver – 400 g;
  • onion – 1 pc.;
  • chicken egg – 1 pc.;
  • buckwheat flour and semolina 2 tbsp. l.;
  • boiling water – 200 ml;
  • oil for frying – 3 tbsp. l.;
  • soda – 1/2 tsp;
  • spices and salt at your discretion.

To prepare beef liver cutlets, follow these steps:

  • Rinse the offal thoroughly and remove the film from it. If it doesn't come off well, then pour it on

liver with boiling water. After which the film should come off easily;

  • Next, cut the product into large pieces and grind using a meat grinder. Also pass the peeled onion through a meat grinder and combine with minced meat;
  • Add an egg to the resulting mass and stir. And then gradually add semolina and buckwheat flour, add salt and spices. Mix all ingredients until smooth;
  • Cover the prepared minced meat with a lid and leave to stand on the table (do not put it in the refrigerator) for 15 minutes. This will allow the semolina to swell;
  • After a quarter of an hour, take a frying pan and heat it thoroughly, then pour in vegetable oil. Using a spoon, spoon the meat mixture onto the hot plate. The size of the cutlets should be similar to the size of the pancakes;
  • Quickly fry the cutlets on both sides to prevent them from spreading. Transfer the fried “pancakes” to a saucepan with a thick bottom. Do the same manipulations with the remaining minced meat;
  • Pour 100 ml of boiling water into the pan with the cutlets and place the container on the fire. After the liquid boils, reduce the gas to minimum, cover the pan with a lid and simmer the dish for 10 minutes;
  • When the time has passed, lift the lid and add another 100 ml of boiling water, simmer the cutlets for another 10 minutes and you can remove from the heat. Leave the dish in the pan for a quarter of an hour, then serve.
  • The cutlets will turn out very tasty and aromatic and will go perfectly with any side dish.

    Recipe for chicken liver cutlets with semolina

    You can also prepare an appetizing dish from chicken liver. It is rich in iron and B vitamins and is considered a dietary product. Therefore, by preparing chicken liver cutlets, you will kill two birds with one stone: you will make a tasty and healthy meal.

    And for everything to work, you need the following ingredients:

    • chicken liver – 1 kg;
    • onion – 2 pcs.;
    • medium-sized carrot – 1 pc.;
    • semolina – 2 tbsp. l.;
    • frying oil;
    • a small pinch of salt and pepper.

    If you have all the ingredients in your kitchen, then you can start creating a new culinary masterpiece:

    • The first step is to prepare the liver. Rinse the offal and soak it so that it does not taste bitter.

    30 minutes in water, or even better in milk;

  • After soaking, remove inedible parts from the liver and pass through a meat grinder. A blender is also suitable for this recipe; the taste will not be affected;
  • Wash the carrots, remove the peel and grate them using a fine shredder. Peel the onion and chop it very thinly and finely; if this does not work, then chop it in a blender;

    1. Typically, chicken liver does not have a film or veins. Therefore, we simply rinse it under running water. Pork liver is covered with a thick film that needs to be removed. The same goes for pork and beef livers have a large number of veins that need to be cut off. There is a high probability that beef liver will taste bitter. Therefore, we cut it into medium pieces and soak it in water or milk for 5-10 minutes.
    2. At this time, peel and cut the onion. Cut off the skin of the lard and cut it into small pieces.
    3. Now grind the liver, onion and lard in a meat grinder 2 times. Add egg, salt, pepper and mix. Sprinkle ground meat semolina and mix well again.
